Baingan ka bharta

Tasty dish. Superb with roti.

Ingredients

1/2 kg big baingan (brinjal), 2 big onions, 170 grams tomatoes, 1/2 teaspoon black pepper, 1/2 teaspoon ground red chilli, 1/2 teacup ghee, Salt to taste

Method

Grill whole baingan over fire until skin is burnt. Put in cold water and then peel the skin. Mash it well. Heat ghee, fry chopped onions until light brown and then mix mashed baningans and chopped tomatoes. Stir it till it leaves the side of the pan clear. Remove from fire, mix black pepper and red chilli powder. Serve hot at lunch or dinner.
