Snickerdoodles Cookies

2 3/4 cups all purpose flour,
1/2 tsp salt,
2 tsp baking powder,
1 cup (227 grams) unsalted butter at room temperature,
1 1/2 cups granulated white sugar,
2 large eggs,
1 tsp vanilla extract,
Coating:
1/3 cup granulated white sugar,
2 tsp cinnamon
1. Whisk flour, baking powder in electric mixer
2. Beat butter and sugar until smooth (2 to 3 mins)
3. Add eggs one at a time beating well after each addition
4. Scrape down sides of bowl
5. Add vanilla extract
6. Add flour mixture until smooth dough
7. If dough is soft cover and refrigerate until firm enough to roll into balls (1 to 2 hours)
8. Preheat oven to 190 deg C
9. Shape the dough into 1 inch round balls
COATING
1. Mix sugar and cinnamon
2. Roll dough in mixture. Place on tray, spacing 5 cm (2 inches) apart
3. Using bottom flatten each cookie to 1/2 inch
4. Bake cookies for 8 to 10 min or golden brown around edges
5. Place on wire rack and cool
