Shortbread Cookies
Super snack. Review: came out very nice! :) Dad said they were like going back into time. Mom and Rahul LOVED them too. Bake according to crispness needed.

2 cups flour,
1 cup butter (226g), room temp,
1/2 cup powdered sugar,
1 tsp vanilla extract
1. In electric mixer, beat the butter until smooth and creamy (1 min)
2. Add sugar and beat until smooth (2 mins)
3. Beat in vanilla extract
4. Gently stir flour mixture until just incorporated
5. Flatten dough into disk shape, wrap in plastic wrap and chill the dough for at least an hour
6. Preheat oven to 350 deg F (177 deg C)
7. On a lightly floured surface roll out the dough into 1/4 inch (0.6 cm) thick circle
8. Place rounds on sheets and put in refrigerator for 15 mins
9. Bake for 8 to 10 mins or until the cookies are lightly browned
10. Cool on wire rack
