Vegetables with sweet and sour sauce

Ingredients

1 small red pepper, 1 small green pepper, 1 onion, 1 carrot, 2 sticks celery, 1 tablespoon cornflour, 1 tablespoon soy sauce, 1 tablespoon brown sugar, 5/8 cup chicken stock, 4 tablespoon vinegar, salt

Method

Cut the peppers into wedges, the onion into eights and the carrot into wedges. Slice the celery diagonally. Drop the vegetables into boiling water and simmer for 5 minutes. Mix the cornflour with the soy sauce. Put the sugar, stock and vinegar into ta saucepan, bring to the boil and add cornflour and soy sauce. Simmer, stirring, for 2-3 minutes. Add the vegetables and salt to taste and reheat. Serve in a heated bowl
