1 eggplant-thinly sliced, 1 tblsp olive oil, 2 onions-chopped finely, 2 tomatoes-chopped finely, 1 cup soya-boiled and minced, 1/4 cups cheese-grated, Seasoning: maggie masala, oregano, nutmeg, black pepper, salt
Sprinkle eggplant slices with salt and set aside for 30 min. Rinse and pat dry. Heat oil in a skillet cook egg plant on both sides. Now cook the boiled soya (minced), add salt, black pepper or any seasoning of choice. Now fry onions with garlic till brown. Add salt. Remove from heat. Add tomatoes to the skillet with oil and fry. After tomatoes are done add puree and cook for sometime. Add nutmeg. In a baking dish place eggplants. Cover them with soya. Ove soya add onions and cover the layer of onions with tomatoes. Sprinkle cheese. White sauce too can be poured over this. Sprinkle cheese and veg. Bake for around 25 to 30 min
