Sooji ka halwa
An absolutely delicious halwa. A must try.

one katori of sooji,4 tablespoons of kishmish, 5 tablespoons of broken cashew nuts, four chota elaichi pods, 5 tablespoons of desi ghee, half a katori of sugar (or to taste)
Take 4 tablespoons of kishmish, clean it of all stalks, also take 5 tablespoons of broken cashew nuts. Take four chota elaichi pods, open the pods and crush the separated elaichi seeds. Take one katori of sooji. In a preheated karahi put 5 tablespoons of desi ghee. Side by side take a pan and put 3 katoris of water add half a katori of sugar (or to taste) and bring to boil after adding the crushed elaichi seeds. In the karahi with the heated desi ghee add the kaju and fry, they will quickly become brown, Add the sooji and fry till the sooji is brown and you get the nice fragrance of cooked sooji, Add the kishmish and mix. Now, carefully pour in the sugar water while stirring the sooji in the karahi so that no lumps are formed. The sooji will soak up the water and swell. Keep cooking till the halwa looks ready. Serve warm.
