Basic banana walnut cake with shakar

1/2cup softened butter
1/2 cup shakar/jaggery powder
2 eggs
1 teaspoon vanilla essence
1 teaspoon cinnamon powder
1 cup whole wheat flour
2 and 1/2 teaspoon baking powder
1 ripe banana, mashed
1/2 cup of walnuts, chopped
Preheat oven to 160 degrees celsius, grease deep cake tin , line the base and sides with greaseproof papers and grease the paper, alternatively grease and flour the tin
Sift the flour and baking powder together
In a bowl, cream the shakar and butter togther until fluffy.
Add the eggs and beat until glossy.Add the vanillas essence and the cinnamon powder and mix well.
Spoon the mashed bananas into the mixture and mix.
Add the flour mixture in gradually and beat until no lumps remain. Whole wheat flour will make the mixture a little thick so add a little milk and mix so that the batter is easier to pour into the tin.
Fold in the chopped walnuts.
Spoon the mixture into the prepared tin and smooth surface. Bake in oven for 20-30 mins. Use a cake skewer to test the centre of cake.
Remove the cake onto wire rack and let it cool.
