Dal Bati Churma

250 gm wheat flour/gehu ka aata
1/2 tbsp baking soda
2 tbsp salt
10 tbsp Clarified Butter/Ghee
3 Glass Water
100 gm Toor dal/pigeon peas/arhar dal
50 gm Split Bengal Gram/Channa dal
1 piece onion chopped
1 piece tomato chopped
1 tbsp coriander powder chopped
1 tbsp dry mango powder
2 tbsp red chili powder
4 piece Dry Red Chili
1 tbsp turmeric powder
1 tbsp cumin seeds
1 tbsp garlic paste
1/2 tbsp Mustard seeds
1 tbsp garam masala
1 pinch Asafoetida/hing
1 tbsp Chopped Almond and Cashew nuts
4 tbsp sugar powder
Assemble all the ingredients properly.
Now take a bowl, add wheat flour in bowl then add baking powder,1/2 salt according to your taste.
Then add 5 tbsp clarified butter in it, mix it well, then add little amount of water and make smooth dough like roti.
Now preheat gas Tandoor on medium gas flame, meanwhile prepare the bati.
Take a small portion of dough and make a lemon size balls. Now place balls in Preheated tandoor.
Cover the tandoor and bake the bati on medium flame.
Now prepare the rajasthani dal,mix and wash both pulse,then add pulse in a pressure cooker.
Then add 600 ml water,1/2 turmeric powder,1/2 tbsp salt, then cover the cooker and put on high flame.
Give 1 whistle on high flame and 2 on medium flame, switch off the gas flame after 2 whistle.
Allow cooker to cool down in room temperature.
check the bati,turn properly to bake another side in flame, keep flame to medium.
After 3 minutes check the bati and turn again, cover again for next 6-7 minutes.
The surface of bati is light golden brown color, then switch-off the flame now.
keep the bati in bowl then add clarified butter in it.
Lets prepare churma, grind the bati in grinder jar properly.
Now take a pan and heat
Then add cardamom powder and chopped nuts in it, saute for 2-3 minutes.
Switch off the gas flame and take in bowl.
Do not add the sugar powder in hot churma , allow to cool then add sugar powder in it.
After the churma cool down then add sugar powder according to quantity of bati.
Open cooker to check pulse after cooling down.
Now take a pan and heat the clarified butter in it switch the gas flame medium.
Add asafoetida ,cumin seeds,mustard seeds,saute all for 30 sec.
Then add dry chili,add chopped onion,saute until the the onion gets light brown color.
Now add the chopped tomato,garlic paste,red chili powder,turmeric powder,garam masala ,dry mango powder,coriander powder,mix and saute for 3 minutes.
Then add 300 ml water in it again cook for 3 minutes, add tempering in boiled pulses.
Mix it well, cook for 1 boil on high flame.
Add chopped coriander and salt according to your taste.
Now switch-off the gas and serve hot with bati and churma.
