100 grams cottage cheese chopped, olive oil, 3 to 4 cloves of garlic, one medium onion, mushroom, half a capsicum, 3 to 4 tomatoes, chicken stock, red chili flakes, oregano, salt, garam masala, coriander powder,pepper, sugar, grated cheese, milk, pasta
In a large sauce pan heat olive oil over medium heat. Separately chop 100 grams cottage cheese into pieces and shallow fry them in a bit of olive oil until lightly browned and keep aside. Saute 3 to 4 cloves of minced garlic, one medium onion finely chopped until softened about 2 to 3 minutes on low heat. Add any vegetables like chopped mushrooms, half a capsicum and saute together. Add 3 to 4 finely chopped tomatoes and a little bit of tomato puree and cook together. Now stir in chicken stock and red chili flakes, oregano, one teaspoon of garam masala, one teaspoon of coriander powder, salt, pepper and a pinch of sugar. Cook together until oil separates. Now add some grated cheese to taste and 1 to 2 tablespoons of milk. Cook for another 5 to 10 minutes until milk is incorporated and sauce is thick. Separately cook the 2 cups of boiled pasta as per instructions. Drain pasta and add to sauce, add cottage cheese pieces and mix well, garnish with fresh basil leaves.
