Delicious light meal for breakfast

Ingredients

1 1/2 cup poha, 1 medium onion finely chopped, 1 or 2 green chilies split or chopped, 1 1/2 tsp oil, 3 to 4 tsp peanuts, 3/4 tsp rai, 3/4 tsp jeera, 1/4 tsp haldi, salt to taste, 1/2 to 1 tsp sugar, lemon juice to taste, 2 tbsp coriander leaves chopped

Method

Add poha flakes to a bowl or strainer. Rinse quickly with water and drain the water completely. Set aside to soften. Meanwhile prepare vegetables. When poha turns soft add sum sugar and some salt. Heat a pan and add peanuts. Dry roast them until golden. Remove to a plate and set aside. Pour oil in the same pan and add jeera. When jeera begins to pop add hing, onions, curry leaves and green chilies. Saute until onions turn light pink. Add haldi and poha. Mix well and cover the pan. Cook on very slow heat until poha is hot. Add coriander leaves and switch off. Add salt to taste and sprinkle lemon juice. Mix poha well. Garnish with roasted peanuts and coriander leaves.
