Tomato pasta with vegetables

Ingredients

Olive oil, 3 to 4 cloves of garlic, one medium onion, mushroom, half a capsicum, 3 to 4 tomatoes, chicken stock, red chili flakes, oregano, salt, pepper, sugar, grated cheese, milk, pasta

Method

In a large sauce pan heat olive oil over medium heat. Saute 3 to 4 cloves of minced garlic, one medium onion finely chopped until softened about 2 to 3 minutes on low heat. Add any vegetables like chopped mushrooms, half a capsicum and saute together. Add 3 to 4 finely chopped tomatoes and a little bit of tomato puree and cook together. Now stir in chicken stock and red chili flakes, oregano, salt, pepper and a pinch of sugar. Cook together until oil separates. Now add some grated cheese to taste and 1 to 2 tablespoons of milk. Cook for another 5 to 10 minutes until milk is incorporated and sauce is thick. Separately cook the 2 cups of boiled pasta as per instructions. Drain pasta and add to sauce and garnish with fresh basil leaves.
