Mandarin Orange Marmalade

1/2 kg mandarin oranges, 1/2 sugar.
Slit 1/2 kg mandarin oranges around the centre so that it is easy to pop up the pips, be careful about about removing all the pips you can see as otherwise it will become bitter. Slice the flesh. Put it in a large stainless steel pan. Add 1/2 kg sugar ,the same quantity and cook it on low heat, stirring it all the time. Remove the scum that arises and keep on stirring till it is a little less dense than the consistency required as it will solidify. Do the plate test put half as spoon of the stuff on a plate and tilt it If it is a solid mass and does not dribble ,it is done .
