Basic Chocolate Cake

• 2eggs • ¾ cup powdered sugar(sugar has to be powdered, otherwise it burns) • 2 tbsp cocoa powder • ½ cup maida (flour) • 1 tsp baking powder • ¼ cup milk • ½ cup oil • ½ tsp vanilla essence


Beat eggs and sugar till the eggs turn fluffy and the mixture becomes more than double in volume. Add essence. Sift flour with baking powder and cocoa. Keep aside. Add oil gradually to beaten egg-sugar mixture. Mix well. Add flour and milk gradually till all the flour is used and a slightly thinner than a soft dropping consistency is obtained (thick pouring). Beat gently, at low speed if you are using as electric egg beater. Pour into a container and micro high uncovered for 4 minutes .Do not microwave for a longer time even if the cake appears unbaked after 4 minutes. Let it stand for 4-5 minutes. Let it cool for 5-10 minutes before removing from the baking dish.
