Lemon Chicken with Mushrooms

• 200gm chicken- cut into bite size pieces
• (100 gm) ½ packet mushrooms –sliced
• 1tsp grated ginger
• ½ tsp garlic paste
• 2tbsp oil
• ¾ tsp salt, or to taste
• 4tbsp honey
• 4tbsp lemon juice
• ¼ tsp ajinomoto (optional)
• 2spring onions –chopped along with the green part
• 1-2 drops yellow colour
• 2tbsp (level) corn flour
In a casserole mix oil, chicken, garlic and ginger. Mix well. Micro high covered for 4 minutes. Add mushrooms, spring onions (keep the green part aside), salt, honey , lemon juice and ½ cup water. Micro high covered for 3 minutes. Dissolve corn flour in ½ cup water. Add corn flour and colour . Mix well. Micro high uncovered for 2 minutes. Let it stand for 2 minutes. Serve hot garnished with chopped green part of spring onions kept aside earlier.
NOTE: only chicken in lemon sauce can also be made. Increase chicken to 300gms and do not use mushrooms.
