Tomato stock • 1onion –chopped • 2big tomatoes –chopped • 4-5 flakes garlic –crushed • 1”ginger piece –crushed • 1 ½ cups water Other ingredients • 1carrot , 10 French beans • 4-5 medium flowerettes of cauliflower • 2 small onions –cut into four pieces • ¼ of a small cucumber –cut into thin slices • 1small capsicum – cut into ½” pieces • Salt to taste , ½ tsp white pepper, ¼ tsp ajinomoto ( optional ) • ¼ cup tomato ketchup (2tbsp) • 2-3 tbsp vinegar , 2tspsoya sauce • ½ -1tsp sugar ( optional) • 2 tbsp cornflour • 3 tbsp oil


Micro high all ingredients for the tomato stock together in a deep dish for 6 minutes or till the water boils properly. Strain. Keep the tomato stock aside. Scrape carrot, string French beans. Wash and cut beans and carrots diagonally, beans into 1” long pieces and carrots in ¼” thick round slices. In a casserole add 3 tbsp oil, onions, carrots, beans spring onions (without the green part) and cauliflower. Micro high covered for 4 minutes. Add cucumber and capsicum. Add salt, pepper & ajinomoto. Mix well. Micro high for 2 minutes. Add the prepared tomato stock. Add tomato ketchup, vinegar & soya sauce. Mix corn flour with ½ cup water, stirring continuously. Mix to vegetables and micro high uncovered for 5-6 minutes or till sauce boils and turns thick. Let it stand for 1-2 minutes. Serve hot.
