Ingredients

• ½ kg Karelas (bitter gourd) peeled, slit, seeds removed, & rubbed with salt Keep a aside for 2-3 hours. Stuffing • Onion paste • 3/4" Ginger pieces (chopped finely) • 2 tbsp Oil • 1 tsp saunf powder • ¼ tsp Haldi • ½ tsp Salt • ¾ tsp Amchoor • ½ tsp Red chilli powder • ½ tsp Garam Masala • ¾ tsp Dhania powder Yogurt coating • ½ cup thich curd- hung Muslin cloth for 15-20 minutes • 1piece ginger - crushed to a rough paste • ¼ tsp salt • ½ tsp red chilli • ¼ tsp Garam Masala

Method

Peel Karelas. Give a cut in center lengthways. Rub salt inside and over karelas. Keep aside for 2-3 hrs. Wash karelas well to remove bitterness. Micro high covered for 8 minutes on a plate or a flat dish. In a flat dish, M.H. 2 tbps oil for 3 minutes. Add Saunf. Mix well. Add onion paste and Ginger. Sprinkle Haldi, Salt, Dhania, red Chilli powder & Garam Masala. Mix very well. M.H. 7 minutes. Stir once in between. Fill the stuffing in the Karelas. Keep aside. Mix curd and Ginger paste, salt red chilli& Garam Masala. Keep aside. Arrange all the Karelas in the dish, side by side.Put half the curd on themand spread to cover all the Karelas. Turn the Karelas and put the left over Curd on them. Spread to cover well. Keep aside till serving time. At the time of serving M.H. 3 minutes and serve immediately.
